New A La Carte Menu by Chef Stuart

If you are looking for a formal dining environment with a modern twist, the historic, beamed Verderer’s Court restaurant reflects the room’s continuing use as a courthouse for the Forest of Dean Verderer’s. This seasons A La Carte menu is now available and offering dishes prepared with fresh, locally sourced ingredients.

A La Carte is a phrase meaning “according to the menu” that was adopted from the French in the early 19th century.  An A La Carte menu offers you the choice to order an item from the menu on its own, priced and prepared separately to a set meal.

ABOUT THE CHEF

Stuart began his career in London working at the prestigious Houses of Parliament. After progressing as far as he could he moved back to his native Wales to forge out a career that would ultimately see him as Head Chef at The Celtic Manor Resort, overseeing the busiest outlets of the Resort.

After 3 years at the Resort, Stuart was instrumental in setting up a new Gastropub concept in Buckinghamshire that was successful and allowed him to learn about business management as well as fulfilling his passion for seasonal, locally sourced menus and attaining recognition for his food.
Stuart was then invited back to The Celtic Manor for a second time to launch a new business concept that has transformed the dining experience for guests and continues to do so, focusing on seasonal, simple but achievable food that still carries the 5 Star recognition.

Whilst working full time at the Resort Stuart was also satisfying his desire to teach, working at Coleg Gwent on a part time basis teaching the next generation of young chefs the industry fundamentals. The Resort still continues with Stuart’s legacy and has opened further outlets based on the performance from the first.
Stuart finally left the Resort in 2016 to join the Speech House where he has built a team with a view to achieving recognition for the quality and high standard of the food. The team are a young, dedicated and passionate team with the same vision and direction that will ultimately take the Speech House dining to the next level.

When Stuart is not working at The Speech House he also owns an award winning festival and events catering company with his wife specialising in American Pit BBQ. The business has been built on Stuart’s no nonsense approach to food and his passion for fire, smoke and meat.
